The IDE software is XCode. The language is Objective-C though XCode will compile regular C as well. You need a Mac and should register with Apple as a developer for which there is a charge. You can start off without paying anything but you can't deploy apps to devices, just a simulator.

If Xcode overwhelms you, try Corona SDK from Ansca Mobile.

if you are into game development, you should also get to know game engines such as corona, unity or cocos2D/3D
