Default Creating video demos

Hi All,
Quick question, I was watching the demos (on youtube) of Touch Fighter and Spore from last year's SDK show off and noticed that when they are demo'ing the apps they are using an iPhone and the simulator (or something that looks a lot like it). Thus they are getting all the input features of the iPhone while still being able to project the output to the audience.

How are they doing this? Is this possible for us "regular" folk or is this only available to Apple. It looks like that have a special version of the iPhone that lets them hook up a hw debugger (jtag, ice, etc), so I'm guessing that might be how they do it. But it sure would be nice if we could achieve the same thing for making demo videos. It sure would beat using the simulator or a capture program (Snapz, etc).

I think when they showed the very first iPhone they made a comment about that, they had a cable wired directly into the video output(the video output that drives the lcd screen, not the regular dock connector video output) of the iPhone or something like that
