Giving your developer your device ID so that he can create a provisioning file that covers your device only allows the apps he develops to be installed and run on your iPad. The app will not be able to do anything more than an app can do. For instance, it cannot capture phone numbers you dial or read data from the private sandbox of any other app. The app will have access to the public portions of your iPad, if that is a concern to you.
