Try using Instruments in XCode. In XCode 4, click the Product menu and select Profile.

instruments is an external tool which we can use to test both in simulator and while running on a device leaks,allocations of memory etc.
u can use build and analyse in xcode to know the leaks.

Apart from primary/basic testing, you have to download the iPhone Development Guidelines and make sure that the app or app development fulfills all specified points in Guidelines. Because, it helps to avoid unnecessary delays in getting your app released in iTunes.

You can write huge tests case for iPhone app testing based on the app features. Some of the performance factors to consider are listed below.

* Usability testing
* Navigation errors
* Presentation errors
* Control usage problems
* Accessibility
* Truncation errors
* Page scrolling
* Orientation
