I would recommend reading some of these books to get an idea of where to start. As you get more confident start looking over the source code on the Apple site, the Apple documentation, forums like this and blogs. But, the books will give you the jump start that you need.
If you are totally new to programming:
- Learn C on the Mac
If you are totally new to object-oriented programming:
- Learn Objective-C on the Mac
If you feel relatively confident with programming try:
- Beginning iPhone Development
- If you prefer eBooks I offer one on my website but directed at people who just want the no-BS guide to the topic
All of these books are a good START - they essentially give you the skills to delve into Apple's website, forums like this to learn for real. The bottom line is practice right?

Well, I can tell you that if you have never really programmed before then you will probably need to learn a lot of things. Some people spend years becoming expert programmers.
My advice is to start small - as you can do more and more things you will feel more confident.
