In your info.plist, select any cell, and click the "+" symbol at the end. set the cell as
"UIPrerenderedIcon" then "true" or "false".

"true" is an icon without the shine. "false" is.

LATEST version of option in Info.plist
"Icon already includes gloss and bevel"
(checked means no gloss or bevel will be added)

In Xcode 4

1) select your project in the in file brower(the top level the one that brings up all the settings).
2) Select your output target, click on the info tab
3) click one of the key cells and with the + sign and select 'Icon already includes gloss effects' and set it to 'YES'.
(In other words, I'll add my own effects to my icon thank you very much!)
