Question Choosing Software Version for Test Device

I just bought a refurbished iPod touch 1G ($159 from Apple) to use as my lowest common denominator test device (i.e. fewest hardware features, keep at an older software version). It came to me with OS v1.1.4. I obviously need it at v2.0 minimum to get the Apps on it. iTunes wants to upgrade to v2.2.1. Is there a reason and/or way for me to upgrade it to v2.0 instead so that I can use it as a baseline test device? Why do many people build for v2.0 as the baseline, if the upgrades from 2.0 to v2.2 are free?

EDIT: Sorry, read a bit quick there...

Some people use 2.0 because they don't wanna upgrade, they have "jailbreak-apps" on it etc..

Thanks Eric. If it's only for the jailbreakers, then I will go ahead and upgrade the device to 2.2. Guess I can continue building for 2.0...

FYI anyone considering this for a cheap test device. If you buy an iPod touch 1G, they want you to pay the $9.99 to upgrade to v2.0. I assumed that it would include current software, but it doesn't. I guess the 1G never shipped with it, so they figure they don't owe it to you.
