Hi, i'm a one man iPhone developer, and i mainly use my own iPhone for development. I downloaded the iPhone OS 3.0 beta, but in the iPhone OS 3.0 beta software release - Pre-Installation Advisory there are these two lines:
• Use iPhone OS 3.0 beta software for development only. This new version
should only be deployed on devices dedicated for iPhone OS 3.0 beta software
development.
• Updating devices to iPhone OS 3.0 beta software. By installing iPhone OS 3.0 beta software on your Authorized Test Devices, these Devices are permanently “locked” into testing mode and cannot be restored to earlier versions of iPhone OS.
does this means that if I install this Beta OS, i cannot then restore to the 2.2.1 version? This is my daily phone, and if this OS version is unstable etc. i cannot simply restore? O.o

Apple had the same "Threats" with iPhone OS 2.0, however, if you know how to use DFU mode you were able to restore things.
If you are worried about this situation, I wouldn't update your iPhone. I would also keep an eye out for more information regarding this topic.

I was just about to post the same thing. I am wondering this as well. I use my phone as the testing device and do not want to be locked into this...
It's a deep restore mode, used by apple for software upgrades. This is used in the processes of jailbreaking actually.

Is this a safe process, under the iPhone OS 3.0 beta? I'm really in the process to install it, but if anything goes wrong with the stability of the OS and my most used apps (bought from the app store, and so, compiled for 2.2 / 2.2.1 etc.) it is really a pain, cause as i said, it's mainly my daily use phone.

I can't really speak to the reliability. If you rely really heavily on this device, I would utilize the simulator and an iPod Touch.
Would anyone with multiple devices be willing to try installing iPhone 3.0 and then DFU'ing back to 2.2.1 for those of us who are wondering if it will work?
downloading the os onto my 3g as well which is my primary. I have a 1st gen iphone which i'll use as backup if this messes things up!

I'm just guessing here, but it's possible that the update could change the format of some of the data that's stored on your iPhone. So if you updated to 3.0 and started doing your backups, then tried to restore a backup from a 3.0 phone to a 2.x phone, it may contain data in formats that the 2.x OS can't understand, that's what I'd be concerned about. Is there a way to make a backup of your iTunes backup so you can hold on to a clean copy of your data that was last used with OS 2.x?
I'm really eager to update to 3.0 too, but my development phone is also my main cell phone, and I don't want any problems there or the possibility of not being able to go back to 2.x if I need to.

Yeah I sorta had this hunch too, but I thought the same thing about 1.x->2.0 as well and that worked.
talked to peeps on irc, they said no go on the dfu downgrade. im also in the boat of main def device is main phone also, so i dont want to upgrade and it suck so bad and not be able to use my phone. might wait till tomorrow to see if something else comes along that allows downgrade.
Ahh ok, I figured that would work. I'm just wondering about 2.2.1 from a development perspective. Thinking about just getting a Touch for 2.x potentially unless the DFU option seems plausible.

Thats scary. Im already on 3.0. Hopefully I dont need to downgrade for any reason.

bu that's a bit scary though, there must be a way, i hope that my local Apple Store wont get an angry costumer (me) because his phone is dead
