Compatible OS Version - How to specify earliest version supported?

I am nearly ready with submitting my first app. I am just a bit confused as to how I build (or specify) which OS versions I want supported.

Do I choose the earliest version I want supported when I build the app in xcode using the Distribution profile (So for instance for my app I'd choose "Device - 2.1" from the pulldown and have OS 2.1 and anything thereafter compatible)?

Yep, what ever you build as in Xcode, is the lowest version supported.
