Hi MadChef,

AdMob reserves its interstitial inventory for only a small number of premier publishers. Unless you've been approved by them, you won't see AdMob interstitials.

"Note: All publishers can run rich Interstitial House Ads in their own applications. Paid interstitial ads, however, are only offered to a select group of publishers. If you become eligible, Google will be sure to contact you."

If you have been approved, then you need to get an additional AdMob ID set up for your interstitials. Once you have that, the MoPub team can help you set that up.
