Default Apple Developer Payment after Xmas Holidays?

Hello there.
I am an iOS Developer and I was wondering when will Apple pay me for December? Now that the holidays are over?

It doesn't matter when your app was released.
Go to iTunesConnect, over there you'll find "Payments". Around 14th each month an exact amount for the previous month will appear there, along with a payment date.
If you earned less than $150, then the payment will rollover to the next month (probably, It might've changed recently).

So, all the money you earned before 31st December, you'll see around 31st Jan. Everything you'll earn between 1st Jan & 28th Jan you'll see around 29th Feb.

Also, keep in mind that Apple pays according to so a called "fiscal calendar". In that calendar months last either 28, or 35 days (4 or 5 weeks). A link to the fiscal calendar is in the Payments tab in itunesconnect.
