It's the first day of the launch of one of our new apps, and while I am yet to have the sales reports, I can see I am already ranked on Applyzer. Sounds good, plus it's in the "Games" category (a saturated category, at best). One of our other applications is in the "Social Networking" category, but it still has an OK rank in the "Top Grossing" section of the UK market. (not that great, but looks good! ~686). Anyway, the rank of our new app, in the games category, is higher up than that (lower number) in the UK. Should I be excited about this, or is it just calculated that day? When I say excited, I mean should I expect a sales number of higher than the social networking app.
well yes
Since your game is only available for 1 day the sales must be higher than for your social app.
The question is if your game will keep generating these sales over time.

Thanks for your input, but what I really meant by the question was what does the ranking mean (2 options):
1) The sales of the game are higher in one day than the total sales of the social networking application of all time.
2) The sales of the game are higher in one day than the sales of the social networking application in one day.
It's number 2, I think someone figured out that ranks are based on like a rolling 3 - 7 day average, with the past day given the most priority
That confirms what I see too. I have a $299 app that sells about one every other day. On a rare occasion when I had 2 sales in one day, my ranking in top grossing for my category (music) shot up to #17. Then over the course of one day, it dropped hour by hour to #100 or so. Then I had one sale yesterday, and now I am back to #61 for my category. I think they ought to average over a longer time period to get a more meaningful ranking.
