This has been a very long process for my latest app.
I made a simple app with 7 tabs (tab based) and
it is basically a book of some sort. it was rejected
with reason "too simple". So I add a compass function
in it and resubmit. Again, rejected with the reason too simple.
So I added more feature to it, like customizable backgrounds
and color and revamped the graphics to make it look a lot
better and resubmitted. We'll see how this goes. Sigh.

They just emailed me a week ago, and said "We require additional time. Sorry for the delay...". Since my app is soooo simple that it took just a week last time I submitted another one, I don't understand why they take such a long time and don't explain much. Apple disrespect developers in a sense.
What was the app about if you dont mind me asking? I know they tend to take additional time reviewing gambling apps, for instance.
Latest update for Boy Loves Girl was much quicker than the last. Only took ~4.5 days from Waiting For Review till Pending Release.

Anyone else stuck in "processing for app store" for over 3 hours?
I submitted my update last Tuesday, and yesterday (Saturday) it went into review, but the metadata was rejected an hour later. I updated the metadata, submitted it again, and now it's been Waiting For Review for almost a day. Throughout this thread I see that normally after you fix the metadata, it goes back to In Review straight away. This is not the case for me. Will I have to wait through the entire review process again?

EDIT: Pretty much exactly 24 hours after fixing the metadata, the app is back In Review.
I uploaded it last Sunday and rejected and reuploaded it a few hours later (to change the Binary Details).
It was reviewed exactly 7 days later. First there was some serious misunderstanding on how to use a specific functionality of my app (not a good sign ). That’s why my app got rejected first.
Using the Resolution Center, I could clarify everything (I provided a little piece of information on how to use my app). My message went out at 9:18, so they reacted pretty fast, given it was finally approved half an hour later.
There are two things that I learned
- be prepared to wait a week for review to take place
- there are actually real people performing the review-process and you can talk to them

For those who are interested, my app is called LiveScanner (will be for sale in a few days, so there’s no AppStore link yet). It’s intended to be a very easy way to scan pages and save/export them as PDF files. No complicated menus, no unnecessary tricks, just an easy scanner app giving you PDFs of everything that lies in front of you. All you have to do is hold your iPhone over a piece of paper, wait for a yellow Rectangle to appear as a frame around your paper (your paper turns into a "button"), and press on it (Have a look a the icon on the left, that kinda explains what the scanning process looks like). It’s using a lot of serious math (projective geometry) and engineering (filters, control theory), harnessing the computational power of an iPhone 4 and iPhone 4S to the max.
As I said, it will be available in a few days for a tier 1 price (0.99$).

Wish I would have seen this earlier today. If you wait until Thursday your app will still appear with the apps released today (2-14-12) and so you will appear BELOW any apps released on Wednesday and Thursday.
You are missing your exposure by sitting on your approved app and not releasing it immediately upon approval.
I scrolled through the entertainment category just now to confirm this is still the case, and it still is.
You need to release your app ASAP, you are only missing the best FREE exposure your app will get.
