Default selecting ipsw file to restore from

Okay, just worked out how to do this thanks to this article: Download and Install iTunes 7.7 and iPhone and iPod Touch Firmware OS 2.0 » My Digital Life

Hold down the Option key (on mac - shift on Windows) and select Restore in iTunes (with your iPhone connected obviously). Then select the ipsw file you downloaded and open it. This runs the restore/upgrade process. Good luck!
