I'm just guessing here, but it's possible that the update could change the format of some of the data that's stored on your iPhone. So if you updated to 3.0 and started doing your backups, then tried to restore a backup from a 3.0 phone to a 2.x phone, it may contain data in formats that the 2.x OS can't understand, that's what I'd be concerned about. Is there a way to make a backup of your iTunes backup so you can hold on to a clean copy of your data that was last used with OS 2.x?
I'm really eager to update to 3.0 too, but my development phone is also my main cell phone, and I don't want any problems there or the possibility of not being able to go back to 2.x if I need to.
