Not sure how useful this is now that Christmas is over...
If you want to change just the icon displayed on the store (not the mobile store), then you can just upload a new one. Apple asks that the two icons be similar, but you can deviate from that a bit. Give it a few hours to change.
Changing the actual application icon requires a resubmission. This is also the icon that the mobile app store uses.
