My problem with IB was that it worked good until I had to do something more dynamic - like only show buttons in certain cases or change the screen based on logic. Then I ended up with a mish-mash of approaches that was more confusing than just coding by hand.
But I think for certain types of apps it would be worth the learning curve. A year from now I may be arguing the other way.
