Hey Robyn-
I get the itunes link after it goes live (not sure if there's a way to get it beforehand). For my website I usually just make a page with the screens, description, and video etc (without the itunes link) and then when it actually goes live in the App Store I snag the link and just update that one part. You could always just put coming soon instead of a link and then update it once it goes live or something like that :-)
For the video, if you think your app is slow/boring in the video might I suggest speeding it up a bit. I did that with my video, else it would be pretty boring to watch the user change things for a minute or so. So yeah, maybe try speeding up the slower parts of your app in the video and then when you get to some area in your app where things are happening, slow it down to normal speed to show off that feature etc. Or maybe just a bunch of quick cuts showing off different features. There's probably other things you can do but those are the only ones I can think of right now :-)
